Curry does not have to be complicated to be delicious! I am going to share with you a simple yet amazing curry stew that you can make with very few ingredients. And what’s great about this recipe is you can add more ingredients as you like and it wont compromise with its taste! So why don’t you come and try with me?
I used four potatoes and big head of cauliflower. You can add carrots, sweet potato or any of your favorite vegetables or take whatever you have in your fridge, leftover veggies or something left in frozen section. I used frozen edamame beans and long bean and washed them couple of times with normal water.

For this recipe, the main ingredient is Pach Phoron (5 seeds mix), which you can find in any Asian shop. If you do not have Pach Phoron, then you can use cumin seed, mustard seed or black cumin seed. However, for powdered spice I used only turmeric. You can use curry powder to complement with the taste of Pach Phoron, but in my opinion, curry stew does not need lots of spice.

So, to start I peeled and cut the potato in 2cm cube, same goes for the stem of cauliflowers. I cut the caulis in big florets, as I like them in big chunks. But you can cut them small if you prefer!

Now, the most important step, seasoning oil with Pach Phoron. As we are not using any onions or garlic or very few spices, this Pach Phoron will be the key flavor of this stew curry.
First, warm your oil in pot in medium low heat and then put one tablespoon of Pach Phoron. You have to be bit careful not to burn them. As you can see in the picture, they are bubbling, its time to add your potatoes in the pan.

So grab your potatoes (or any root vegetable you have chosen like carrots or sweet potatoes). Add turmeric and salt and give everything a very good stir. The purpose here to add the root veggies first is to roast them a bit before you add other veggies, as to make the stew more flavorful. Stir and roast them in medium low heat for 5 to 6 minutes.

When you see your potatoes are changing colors around the edges (like in the picture), you have to add cauliflowers.

Add cauliflower florets in the pan, stir them really good. Again the purpose is to pan roast them and incorporate the amazing flavors of Pach Phoron with all the veggies.


Now, its time to add water. You can decide how much water you want to add here, depends on how soupy you want to make the curry. I have only added 100ml, as cauliflowers have lots of water inside.


Cover the pan and boil the veggies in medium high heat. After 4 to 5 minutes, cauliflowers will start to look translucent. Now its time to add the frozen veggies.
As you can see, my caulies are still intact, because I did not stir them after I added water. Well, you stir them if you like them mashed!

Now adding the frozen beans and edamame. If you dare, add some fresh chilies too.

Cover the pan and boil the veggies in medium high heat. After a while you will see beans have changed colors, waters are shortened. Check salt at this stage.

You can garnish the curry with fresh coriander leaves. I did not have coriander at that moment, so I sprinkled the stew curry with some roasted cumin powder! Serve warm with rice or flat bread(ruti)!

| Instruction 1. Cut potato into 2cm cubes (you can keep potato skin on if you like) and cauliflowers in big floret. 2. Heat oil in a wok or big pot, put Pach Phoron and let them start bubbling a bit. 3. Add potato, salt and turmeric powder in the pot and give them a very good stir until they are roasted well and changes color. 4. Then add cauliflower florets and stir them until they are coated well with the spices and little bit roasted. 5. Now add 100 ml water, cover pot with lid and boil the veggies until they are translucent. 6. Now add beans, let the veggies simmer a bit til your desired stew consistency. 6. Garnish your curry with coriander leaves or ground cumin powder as per desire. and Enjoy with rice or bread! |
