Bangla Style Fried Rice – Bhaja Bhat (ভাজা ভাত/ ভাত ভাজি)

Fried rice is mostly known from South East Asia. But the moms of Bangladesh, who like to save money and food, they make amazing fried rice from left overs! In Bangladesh we eat rice almost three times a day, so it is normal to have leftover rice from day before. There are many recipes of left over rice, but today I will share you the easiest one.

The magic of cooking the fried rice is that you can add anything to this as a topping, like shredded veggies, cooked meat, eggs even leftover curries! I have only used onion, chili and home grown onion leaves, as I did not have any veggie left in my fridge and also I wanted to make it simpler, because I had an amazing side dish to go with this fried rice! So I did not want to overpower and still wanted to make a good use of my left over rice!

To start with, warm oil in a pan and add chopped onion and chili. Fry until golden brown (you know the drill)!

If you plan to add veggies, you can add in this step. You have to add root or hard veggies first, for example carrots, cauliflower etc. Cook the veggies until your desired texture. But remember to keep the lid open and never to add any water.

After frying onions and veggies, add rice and other soft veggies, like spinach, peas, onion leaves etc. Mix everything well and continue to stir fry.

My fried rice aka Bhaja Bhat is looking good now. Some prefers to add veggies in this step, so they stays in texture.

My fried rice is ready! I have a great side dish to go with. You can of course eat as it is, as its full of flavor, or with your favorite side dish!

Recipe: 3 Servings
Prepping time: 5 minutes, Cooking time: 15 minutes
Ingredients:
500 g of leftover rice
Veggies to choice : Carrots, Potato, Cauliflower, Edamame beans

Spices and Condiments:
20ml Vegetable Oil
1 big Onion – Sliced
2-3 fresh Chili and dried chili
1 tbs Cumin seeds (Cuminum cyminum)
2 tsp fine Salt
Instructions:
1. Slice onion and veggies.
2. Add and warm oil. Fry onion until golden. Add hard veggies and shallow fry until desired texture. You can add cumin, nigella or other favorite seasoning.
3. Add left over rice and soft veggies. Continue stir frying. Turn off heat after 6-8 minutes. Serve with side dish or curry.
