Linseed Spread – Tishi Bhorrta (তিসি ভর্তা)

We Bangladeshis can make bhorrta (spread) out of anything that you can imagine! So here’s today I present one of the bhorrta recipe which might seems unusual for you but I promise that if you can handle chili then it would be very delicious for you.

Yes, today I make spread from linseed! Linseed is full of nutrient and essential vitamins which are good for your body. It is easy and quick to make it, the ingredient list is also very short – we need a cup of linseed, onion, garlic, salt and mustard oil, without it we can’t make any bhorrta!

First thing is to toast linseed in a pan. Pre-heat any deep aluminum pan in medium temparature. You don’t need to wash linseeds, just check if they have any external dirt or other thing than linseed. Continue to stir as you don’t want them to burn.

At some point, linseed will start to pop, so cover the pot with lid, but continue to shake, so all linseed can get roasted well.

After 10 minutes, when linseed spread nice nutty flavor, turn down the heat and immediately transfer to plate and let them cool down.

Then in another pan, dry roast red dry chili. As you can see, I have taken chilies with stem still attached. It is because chilies get roasted or fried better with stems on. Later you can remove stem.

Turn around all chilies so all sides get evenly roasted. Set them aside when they are done.

At the same way, dry roast garlic and set them aside.

Slice onion very thin. I used a small mandolin. Since we are not going to cook the onion, it is important to slice onion as thin as possible.

Now grind roasted linseed in a coffee grinder or in mortar pestle. I coarse ground them so I can feel the texture. As you can see in the picture, there are some whole linseed left.

Now in a food processor (I know, too many steps!), I took roasted chili, garlic, linseed and salt and ground them so they are mixed well.

You want them to grind well, so there’s no big chunk of chili or garlic left.

Now, take a plate where you will make the spread. Take sliced onion and dash of mustard oil and squeeze them with hand. This will make onion softer.

Now put linseed mixture to onion and mix them with hand. Taste for salt and add if needed.

This would be the final look of Linseed spread aka Tishi Bhorrta. A many small steps will give you an amazing mouth watering (or burning) experience! Enjoy!

Recipe: 4 -6 Servings
Prepping time: 15 minutes, Cooking time: 5 minutes
Ingredients:
1 Cup or 250g Linseed

Spices and Condiments:
1 big Onion – Very Finely sliced
8-10 Dry Red Chili
4-5 Cloves of Garlic
5 tbs Mustard Oil
1tsp Salt
Instructions:
1. Dry roast linseed in a pan until they spread nutty toasty flavor, continue to shake the pot in medium flame to avoid burning. Keep them aside in a plate to cool down.
2. Dry roast dry chili and garlic. Thinly slice onion.
3. Coarse grind linseed with a help of coffee grinder or mortar pestle.
4. In a food processor, take roasted chili, garlic, salt and linseed and ground well until no big chuck left.
5. In a plate, take sliced onion and mash them well with mustard oil, until onions are soft.
6. Take all linseed mix and mash them well with onion. Check salt and add more if needed.
Serve them with white rice!
