I am truly excited to write today’s recipe as it involves green jackfruit! Previously I wrote the green jackfruit curry recipe, which is one of the most common recipe in Bangladesh to make with green jackfruit. Today I am writing how to make patty which you can eat as a snack or even make a vegetarian burger!

I have used canned jackfruit obviously, which contains around 250g of fruit. The canned jackfruit is already prepped and reduces a lot of work like cutting, cleaning and boiling the actual fruit. However, the taste of fresh green jackfruit is way better than the canned, so if you ever have a hold of fresh green jackfruit, please use it!

At first, I drained the water from the can. As the fruits were already prepped, it is kind of softer than fresh fruit itself. As you can see, I can break the pieces easily. But this softness if okay for making curry.



Since I wanted to make patty, I wanted it to break it into more small pieces. So I boiled the fruit for 10 minutes, then drained the water, let them get cooled and finally smash them with fork. As you can see in the third picture, the jackfruit already looks like meaty.


While preparing jackfruit, I took a pan to saute ginger garlic paste. This is to prepare the spice mix for jackfruit patty. I sauteed ginger garlic paste until the raw flavor is gone.


Then I added turmeric, cumin, chili powder and gorom moshla to the pan. The temperature should be low all the time, otherwise spices will get burned. I cooked the spices without any water, so we need to be extra careful here not to burn the spices.


When the spices were nicely cooked and there were no raw flavor left, I added Gram flour or Beshon. Beshon acted as binding agent for the patty. If you don’t have Beshon, you can use boiled potato instead. I did not add beshon directly, since it gives a raw taste. That’s why I fried beson with spices.


I added boiled jackfruit to the spices mix. This step will take a little patience, as you have to mix the everything very well.


At the stage I added sliced onion, chili and coriander leaves. As I have not cook the onion, I added at this stage to make them little softer.


Now its time to take the mixture out of stove and give it a good mix. I used my hand but you can use fork or food processor.

Then I put a little oil in my palm and took a small amount of jackfruit mixture. I made small patty with my hand, and tried to make a smooth surface. You can make them round or flat as you wish. Hoping they will not break while frying.

Good thing is that you dont need to deep fry them. I fried them carefully each side until golden and crispy. You don’t need to flip them often, just have to let them get fried properly each side.

So they are ready! Enjoy as a snack with tamarind sauce!

| Ingredients: Green Jackfruit (Canned or fresh) Spice and Condiments: 200ml vegetable oil to fry 150-200g Gram Flour or Chick pea flour or Besan Half tsp of Turmeric powder Half tsp of Red Chili powder Half tsp of Cumin powder Half tsp of Gorom Moshla powder 1 tsp fine Salt 50g Fresh Coriander 2-3 green chili 1 onion |
| Instruction: 1. Strain jackfruit from the canned water and boil them. After boiling strain again and pull them with fork. 2. Take a deep pan and add a table spoon of oil. As ginger garlic paste. Saute until raw flavor is gone. 3. Add dry spices-turmeric, chili, gorom moshla and cumin powder. Saute in low temperature. 4. Then add beshon or chickpea flour and cook until it releases nutty toasty flavor. 5. Add sliced onion, chopped chili and coriander leaves. Cook until they are little soft. 6. Now let the mixture get cooled for a while. 7. Rub some oil in palms and take a small amount of fruit mixture to make patty. 8. Fry them carefully both sides. Serve hot with rice or as a snack. |
