Turnip Stir Fry – Shalgom Bhaji (শালগম ভাজি)

Turnip was never my favorite vegetable. Probably because I hadn’t had any good preparation of it. However, living in Denmark made me awfully missing all the Bangladeshi vegetable so whenever I get something similar to Bangladeshi veggies, I try them without hesitation. So today I will share turnip recipe in Bangladeshi way.

A very few ingredients are needed to make this recipe. For me, the key ingredient is whole mustard seeds. There are two kinds of mustard seed we use most, one is red/brown mustard and another is golden/yellow mustard. The yellow mustard tends to be less bitter than the red one and gives a fantastic flavor to food when sauteed with oil. That’s why we use it often in simple vegetable stir fry.

The other ingredients are turmeric powder(as usual), onion, salt and of course chili.

First thing to do is to peel turmip and take off the top part.

Then grate with a grater or slice them very fine with knife. The more thinly you slice, the more quickly it will get cooked.

Heat vegetable oil in a deep pan and then add mustard seed. Do not overheat the oil, because it will make mustard seed splatter all over your kitchen.

Then add sliced onion and cook until slightly brown.

When onion are brown, add grated turnip, salt, chili and turmeric powder and blend everything well until all turnip turns yellow.

Turnip has lot of water content so it will cook on its own juice. So you don’t need to add extra water to cook them. But important tips is to turn them over often so they do not burn.

After 10 to 15 minutes, turnip will get cooked on its own water. The best way to check is to take some and try to break. If they break easily it means cooking is complete.

It’s a very good side dish with rice or ruti. It can also be used as a filling to any dumpling or tortilla.

Ingredients:
1Kilo Turnip
1big onion

Spices and condiments:
1 Tsp Turmeric powder
1/2 tsp whole mustard seed
1tbsp salt
Green Chilies to taste
oil
Instructions:
1. Peel turnip and grate with grater.
2. Heat vegetable oil in medium temperature and add mustard seeds when oil is warm.
3. Add onion and cook until brown.
4. Add grated turnip, salt, turmeric powder and chili. Stir well to mix everything.
5. Cook until all water is gone and turnip is cooked.
Serve with plain rice or ruti.
