Crispy Nimki – Muchmuche Nimki (মুচমুচে নিমকি)

What would be the best tea time snack in the gloomy weather? Something that crispy, umami and goes perfectly well with ginger tea or lemon tea? Yes it is Nimki, crispy, easy to make and perfect for a evening snack! There’s many version of Nimki in Bangladesh, but today I will make the easiest one.

The best part about this nimki is there’s only a few ingredients needed. The main ingredient is wheat flour and what makes it special is nigella seeds. Other than those, we only need some salt and sugar and some oil to fry.

In a bowl, I took and mixed all dry ingredients all wheat flour, salt, sugar and nigella seeds.

Then I added oil to the flour mix and mixed them very well with help of fingers.

I added more oil to the flour mix and kneaded until the flour can be shaped like ball when pressed in palms but also breaks easily. This step is very important because it will make the nimki more crispy when fried.

Then I added room temperature water to the flour mix and kneaded until the dough became semi soft dough. I kept it in rest for 15 minutes. After 15 minutes I kneaded again.

Then I rolled the dough with a rolling pin as thin as possible.

Then with a knife, I cut the rolled dough into diamond shape. With a help of spatula, I carefully took all the pieces out.

Then I heated vegetable oil in a deep pan. The temperature should be of medium high, otherwise it will burn the nimki. When oil was hot (I checked by putting one piece in the oil and immediately starts bubbling), I put some pieces in the oil and carefully fried until they were golden in colour.

I rested fried nimki over the paper towel so that the excess oils are soaked out.

Here’s the final look of the crispy umami nimki. Enjoy this delish with hot cup of your favorite tea!

Recipe: Nimki (4 person)
Ingredients:
Wheat flour – 1 Cup
Salt – 1 tsp
Sugar – 1.5 tsp
Nigella seed- 1tsp
Oil – 1.5 tsp
Oil to fry
Procedure:
1. Mix all dry ingredients – flour, salt, sugar and nigella seeds in a bowl.
2. Add 1 tsp oil and mix with flour mix with help of fingers. Add more oil if needed and mix until the flour form a shape when pressed in palm.
3. Add room temperature water to the flour mix to form a dough. Add water little bit a time and knead until forms a semi soft dough. Keep the dough in rest for 15minutes.
4. Roll the dough in a thin layer and cut into diamond shape. Carefully take the pieces out with a help of spatula.
5. Deep fry the pieces in medium hot oil until they are golden in colour. Put the hot nimki on paper towel to soak excess oil.
Serve as an evening snack with tea!
