It is almost half of Ramadan month has passed. As usual, I am late for recipe uploading, and sorry for that! During Ramadan month, Bangladeshi people breaks the fast eating various traditional foods, like Peyaju(onion fritters), Chola Bhuna(Spicy Chickpea), Beguni(aubergine fritters). All of these are vegan and closely tied with Bangladesh and ramadan month. So today I would love to share another vegan recipe of Ramadan, which is Potato Fritter or as known as Alur Chop in Bangladesh.

As it is called Potato fritters, so of course we need potatoes and as it is Bangladeshi, of course we need chili and fresh coriander. You can either use fresh green chili or chili flakes, it is up to your choice. Some people use sliced onion for the fillings too.
And for the outer layer, we need Beshon (Chickpea flour), some wheat flour, baking powder and salt.



First I have mixed all dry ingredients in a bowl. I added a table spoon of oil and just enough water to make a thick batter. Now important step is to beat the batter, because it increases the air bubbles inside and when being fried, the fritters gets very puffy and crispy. So beat the batter with a hand mixer for couple of minutes, until the batters looks puffed up. Then I kept the batter aside.

After making the batter, I made the filling. I boiled and peel potatoes, mashed them with chili flakes, fresh coriander and salt.


Then I divided whole potato fillings in to small equal portions, and then made round balls with help of my palm.


Then I flattened the balls with the help of my thumb, it should look like a big thick quarter.


I made all the potato quarters first and then put them directly in the batter.


The both sides of the potato quarters were dipped in the batter and then put them in hot oil to fry.


I fried them until both sides were golden brown. When done, I kept them on kitchen tissue to soak extra oil.

With three medium sized potatoes, I made eight fritters. If you like, you can make smaller potato quarters and more fritters.

This is how inside of the potato fritters look like. You can eat as it is, or dip in a sauce or like us, mix it with puffed rice and beguni! But that’s a recipe for another day!

| Ingredients: For filling- 3 medium potatoes 1 tsp Chili flakes 1/2tsp salt fresh coriander leaves onion sliced (optional) For batter- 1/4 Cup Beshon(chickpea flour) 1tsp Wheat flour 1/4 tsp salt 1/4 tsp oil 1/2 tsp baking powder Cold water |
| 1. For batter, mix all dry ingredients in a bowl and give it a good stir. Add oil and enough water to make a thick but runny batter like pancake. Whip the batter until its airy and fluffy. Keep the batter aside. 2. Boil potatoes, peel and mash them. Mix the boild potato with chili flakes, salt, coriander and make small quarters. Put them in batter directly. 3. Warm oil in a medium heat. Dip the potato quarters both sides in batter and fry them until golden brown. Put them on kitchen towel to soak extra oil. Serve warm with ketchup or your favourite dipping sauce. Enjoy Bangladeshi Potato Fritters. |
