This is the easiest and quickest pickle recipe I have ever made. It is delicious, tangy, spicy and adds a load of flavor to your food. So if you ever have extra lime lying around in your house, you should try make this too. Sometimes due to sickness, our taste bud does not work. This lime pickle will help you bring back your taste. It is also a great source of vitamin C. Thank you Hafsa for this amazing recipe.

So for this recipe I have taken lime, salt, chili powder, turmeric powder, pach phoron powder and mustard oil (which I forgot to take picture of). The amount of ingredients depends on how many limes are used. You can always adjust ingredients to your taste.

First I cut both end of lime and removed the white part and seeds. White part makes the pickle bitter, so be patient to remove them carefully.

I cut all the limes into 12 pieces each, but you can of course cut them in bigger pieces. Remember that, before cutting them, I washed and dried the limes with a piece of cloth, so there’s no water left on the skin. Any remaining water will make the pickle moldy.

I have taken limes in a ceramic bowl, so they don’t get chance to react with any metal and change colours. Now it’s time to add the spices to the lime. I have added chili powder, turmeric powder, salt and pach phoron powder to the same bowl with lime.

I have gently rub all spices with lime. Remember that if you mix them too hard, lime will get bitter in taste.

Then I have squeezed the juice of one fourth pieces of lime so the pickle get soaked in its own juice.

I have filled a glass jar with the lime. I always recommend to use glass jar, because pickle stays good longer in a glass and does not react with glass. If you use any plastic or metal jar, pickle will always get bad and react with metal.

After filing up the jar with pickle, I added mustard oil directly to jar and filled to the top of limes. This way it will protect limes from getting bad.

Now, sad thing is, we have to wait two weeks to eat this amazing pickle, because limes need some time to get tender. Since we are not cooking them, we have to be little patient. But after two weeks, you will get to eat this pickle and will thanking yourself for being patient!

| Ingredients: 12 limes Salt – 3-4 tbsp Turmeric powder – 2 tbsp Chili powder – 4 tbsp Pach phoron – half tsp Mustard oil as needed |
| Instruction: 1. Wash limes and pat dry them with towel, so there’s no trace of water. 2. Cut both ends of lime and then cut them in the middle lenthwise. Remove white parts and seeds. 3. Then cut lime in pieces according to your preference. 4. Put lime pieces in a glass or ceramic bowl and add all spices and salt. Rub gently. 5. Squeeze juice out of some lime. 6. Fill a glass jar with lime pieces and add mustard oil so all lime pieces are covered with oil. 7. Wait for 10-15 days before they get ready to eat. |
